Thuja Occidentalis, Eastern White Cedar
This delicious syrup will pair great with some lemon or lime and soda water. You can add it to your favourite whiskey or gin & tonic, yum!
1 small handful cedar
1 cup boiling water
1 cup sugar
Instructions:
Cut cedar leaves into smaller pieces and then place in a heat proof container.
Pour boiling water over and cover the container (I use a mason jar lid and gently place on top)
Steep for 30 minutes - 24 hours
Strain into a saucepan
Add sugar
Bring to simmer over medium-low heat, stirring frequently to dissolve sugar. Simmer an extra minute.
Remove from heat and allow to cool.
Bottle, label and store in refrigerator for 3-4 weeks.
Yields: 1 cup

Do not consume if pregnant or breastfeeding.
